Bacon Biscuits

1 pound sliced bacon

3 Tablespoons chopped fresh mushrooms or 2 Tablespoons canned mushrooms

4 Tablespoons chopped green peppers

1 1/2 cups flour [one part all-purpose to one part cake flour works nice for this]

1 teaspoon salt

2 teaspoons baking powder

black pepper

1/2 teaspoon Dijon mustard

1 egg, beaten

1/2 cup milk

1/4 cup bacon drippings

Preheat oven to 400 degrees F.

Fry the bacon until crisp, and reserve the drippings. Drain bacon on paper towels, then crumble into a bowl and mix with the mushrooms and peppers.

In a separate bowl, sift together the flour, salt and baking powder. Add to the bacon and vegetables.

Add black pepper, mustard, egg, milk, and bacon drippings. Mix all together with a fork.

Grease 2 baking sheets. Drop the batter, 1 Tablespoon at a time, onto the baking sheets. Bake 15 to 20 minutes.
