1/3 cup softened butter
2/3 cup brown sugar
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
1 cup milk
Preheat oven to 425 degrees.
Grease, or use cooking spray on, 12 medium size muffin cups.
Cream the butter and blend in the brown sugar.
In another bowl, sift the flour, baking powder, and salt together. Blend in the shortening, and add the milk.
Turn the dough onto a lightly floured surface, and knead gently 8 to 10 times.
Roll out in a 9 inch square. Spread with the brown sugar mixture. Roll up as for a jelly roll, sealing the edge.
Cut into twelve 3/4 inch thick slices. Arrange cut side down in prepared muffin pan.
Bake 14 to 16 minutes. Remove from pan immediately.
These are very good - but should be eaten hot, fresh from the oven. If they get cold, they have a baking powder taste, not so good.
