Hummingbird Cake

3 cups flour

1 tsp. baking soda

1/2 tsp salt

2 cups sugar

1 tsp cinnamon

Mix together - set aside

Mix 3 eggs and 3/4 cup oil, do not beat, add 1 1/2 tsp vanilla, a can of crushed pineapple with juice and 1 cup ground pecan nuts and 1 3/4 cups of mashed ripe bananas.

Add to dry mixture.

Bake in 3 round pans at 350 for 1 hour, check with toothpick after about 45 minutes to see if done. Take out of pans, cool and add icing between layers and on top of cake.

Icing

1/2 cup butter, 1 package cream cheese, 16 oz. icing sugar and 1 tsp vanilla. Cream together - ice cake and sprinkle chopped pecan on top to decorate.
