2 pounds potatoes, peeled and cubed
1 stick butter
green onions, chopped
1 clove garlic minced
1 cup milk
1/4 cup chopped fresh parsley
salt and pepper
1 cup green peas, cooked and drained
Boil potatoes until done. Drain and return to pot.
Meanwhile, in a small saucepan, melt the butter over medium high heat. Add the green onions and garlic. Cook, stirring until soft. Remove from heat.
Mash the potatoes, adding the milk slowly. Add half of the butter with the green onions and mash. Add salt and pepper.
Remove from heat and add the peas. Drizzle the remaining butter and onions over the top.
