Sausage Jambalaya

1 T. olive oil

1/2 pound kielbasa or other sausage, 1/4 inch slices


2 onions, chopped

1 green pepper, diced

1 and 1/4 cups sliced celery

2 cloves garlic, minced

1/2 tsp. dried thyme

1/4 tsp. dried oregano

1/4 tsp. cayenne pepper

1/4 tsp. salt


2 - 14 oz. cans chicken broth

1 - 14 oz. can chopped tomatoes with juice

1 bay leaf

2 cups uncooked rice

green onions, sliced


Heat oil in a pot over medium high heat.

Add the sausage and the next 8 ingredients. Cook until the onion is soft, about 5 minutes.

Add the next 4 ingredients, reduce heat to low, bring to a simmer, stirring occasionally.

Cover and cook until rice is tender, about 30 minutes.

Uncover. Cook until liquid is absorbed, about 5 more minutes.

Cover and remove from heat. Let stand about 10 minutes. Remove bay leaf, sprinkle green onions on top and serve.
