Skinny Mashed Potatoes Boil 3 cups cubed potatoes until tender -- may leave skin on. Drain, reserving 2 Tablespoons of the potato water. Add 1/4 cup Miracle Whip, or other salad dressing, 1 teaspoon horseradish [or more, to taste], 1/2 teaspoon garlic powder [or more, to taste] Mash, adding cooking water, if needed to yield soft and fluffy potatoes.
