Slow Cooker Potato Soup

6 potatoes, peeled and cut into bite size pieces

2 leeks sliced white part only

2 onions, chopped

1 carrot sliced

1 celery stalk, sliced

4 teaspoons OXO chicken broth mix or 4 cubes

1 T. parsley

4 1/2 cups water

1 tsp. salt

1/2 tsp. pepper


1 to 1 and a 1/2 cups of milk

chopped green onions

Put all the ingredients except milk and green onions into a crockpot and stir together.

Cook on low about 9 hours or on high 3 or 4 hours.

Stir in the milk during the last hour of cooking time.

Serve topped with chives in soup bowls.
