Sour Cream and Cheddar Potatoes

6 to 8 medium potatoes

1 to 2 cups sour cream

salt and pepper

1/4 cup chopped green onion

2 cups shredded cheese


Peel and boil potatoes in boiling water. Drain and mash.

Whip with sufficient sour cream to give a light creamy consistency.

Add green onions, salt and pepper to taste.

Place in a buttered casserole, top with cheese, and bake in 350 F. oven

until cheese is crusty and golden brown, about 20 minutes. Serves 4 to 6.
