Swedish Meatballs

Meatballs:

2 lbs ground beef

2 cups soft breadcrumbs

2 potatoes, boiled and mashed

2 eggs, beaten

1 small onion, minced

6 Tablespoons all purpose flour

1 1/2 teaspoons salt

pinch of pepper

1/4 to 1/3 cup of butter or margerine

Sauce:

1/4 cup butter or margerine

1/4 cup flour

4 cups consomme - soup plus water - 2 cans and 2 cups water

3/4 cup light cream

salt and pepper

a few drops of commercial sauce or brown and season

Combine beef, bread crumbs, potatoes, eggs and onion. Shape into 1 inch balls. Roll in flour seasoned with salt and pepper.

Melt butter over high heat and brown meatballs on all sides.

Remove skillet from heat.

Prepare sauce by melting butter over medium heat in saucepan.

Add flour and cook a few minutes, stirring constantly.

Add the consomme and bring to boil stirring constantly.

Add cream, seasonings and enough commercial sauce to give a rich brown color.

Simmer about 5 minutes. Pour sauce over meatballs in skillet and simmer over low heat until cooked about 40 to 50 minutes.
